Move Over Caesar Salad, Here Comes One of My Favorite Summer Salads


If you're in the market for a simple yet delicious salad, my Strawberry Kiwi Poppy Seed Summer Salad recipe is a delightful departure from the typical caesar salad. It's a sweet and vibrant combination of strawberries, kiwi, and crunchy romaine is easy to make, yet really pops with taste.


But like a caesar, it's the dressing that makes it sing. The salad dressing is a simple concoction of just five ingredients; I recommend making it the night before you plan to serve the salad so that all the various flavors have time to meld together.

Summer Salads with Fruit


Typically, if a salad is made with nuts and fruit, the usual suspects are sunflower seeds or candied walnuts and raisins or dried cranberries, but I leave the crunch up to the lettuce and the sweetness comes from the classic combination of kiwi and strawberries. Sweet salads are uncommon and this one is uncommonly delicious.


Pro Tip: Here’s an Easy Way to Remove Kiwis Skin


If you're not used to working with this fruit, I have trick I like to use to remove the kiwi skin:


Using a paring knife, remove a piece from the top and bottom of the fruit. Then take a teaspoon, and place it between the skin and the flesh of the fruit; you should be able to carefully scoop it out!

Strawberry Kiwi Poppyseed Summer Salad Recipe

Ingredients

Dressing
  • ¾ cup mayonnaise
  • ⅓ cup granulated sugar
  • ¼ cup whole milk
  • 2 tablespoons white wine vinegar
  • 2 tablespoons poppy seeds
Salad
  • 2 bunches romaine lettuce, cleaned and dried
  • 2 pints of strawberries, cleaned and dried
  • ½ medium red onion, thinly sliced
  • 1 package (3.5 ounce) honey-roasted sliced almonds
  • 2 kiwi, skin removed and sliced

Instructions

  1. Prepare the dressing the night before you plan to serve the salad. In a mixing bowl, combine all of the dressing ingredients. Cover and refrigerate overnight.
  2. Tear the romaine lettuce into bite-sized pieces and place in a large mixing bowl. Remove the tops of the strawberries and slice in half. Add to the lettuce along with the onion, almonds, and kiwi. Right before serving, toss gently with the dressing.
